What it actually is

A water-soluble B vitamin, lost readily in polished grains and in cooking water.

What it does in the body

Needed to release energy from the carbohydrates you eat, and for the normal functioning of the heart and nervous system.

Where else to get it

Whole grains, pulses, groundnuts, and unpolished rice. Polishing rice strips most of the thiamine away.

In the formula

A carbohydrate-heavy diet built on polished rice increases the need for thiamine at the same time as it reduces the supply.
