What it actually is

Dried palak, powdered. Drying concentrates the minerals, though some vitamin C is inevitably lost along the way.

What it does in the body

Contributes plant iron, folate, vitamin K and the carotenoids lutein and zeaxanthin. The iron in spinach is non-haem iron, which your body absorbs less readily than the iron in meat — vitamin C alongside it improves the absorption considerably.

Where else to get it

Palak, methi, and any local keerai. A squeeze of lemon over cooked greens is not just for flavour; it genuinely helps you absorb the iron.
