What it actually is

Dried carrot, the most concentrated everyday source of beta-carotene there is.

What it does in the body

Beta-carotene is a precursor your body converts into vitamin A as needed, which makes it a safer route to vitamin A than large doses of the preformed kind. Vitamin A is required for normal vision and for the health of skin and mucous membranes.

Where else to get it

Gajar, especially the red Delhi variety in winter. Cooking it in a little fat helps you absorb the carotene — the ghee in gajar halwa is doing more than tasting good.
