What it actually is

Lentinula edodes, the brown-capped mushroom that gives East Asian broths their savoury backbone. Dried and powdered here, which concentrates both the flavour and the nutrients.

What it does in the body

Brings B vitamins, copper and selenium along with beta-glucan fibre. Shiitake is one of the few plant foods that makes vitamin D when exposed to sunlight, though how much survives processing varies enormously.

Where else to get it

Dried shiitake is available in most Indian cities now and rehydrates in twenty minutes. Any mushroom you cook regularly does a similar nutritional job.
