What it actually is

The family of enzymes that break protein into peptides and then into individual amino acids. Your stomach and pancreas produce their own; papaya and pineapple contain plant versions.

What it does in the body

Helps a 25 g dose of protein get broken down and absorbed rather than sitting heavily. This is the enzyme that matters most in a protein-forward formula.

Where else to get it

Raw papaya contains papain and pineapple contains bromelain — which is exactly why both are traditional meat tenderisers.
